I really love coconut so when I heard about coconut oil, I was ecstatic! We were using mostly olive oil for all our cooking needs because try to stay away from canola, corn, and vegetable oils. Then we heard that olive oil may not be the best oil for cooking because it could not handle being heated to higher temperatures. Therefore, we decided to start using coconut oil, avocado oil, and butter for all our cooking needs.
I was given the opportunity to review 2 pints of Tropical Traditions Gold Label Virgin Coconut Oil. We tried cooking with it for frying our morning eggs, making pancakes with it, and I even tried eating it out of a spoon. When I opened the jar of coconut oil, it smelled amazingly delicious! Then when I put some on the frying pan for eggs, it smelled even stronger and more coconut-y! My usual unnamed grocery store brand coconut oil usually smells nice in the container but doesn't smell stronger when heated so I was surprised when I could smell the Tropical Traditions coconut oil more when it was on the pan. Our eggs smelled great but wasn't overtaken with a coconut taste, which was a good thing! So I then tried the coconut oil in my pancakes. The buckwheat pancake mix I used called for 2 tsp of oil and in the past, I would use olive oil but this time, I decided to experiment with coconut oil. My past olive oil buckwheat pancakes were a lot denser and not as fluffy but I thought it was because of the buckwheat. However, when I used coconut oil in the pancakes this last time, the buckwheat pancakes actually came out fluffier and were nice and moist too! So it wasn't the buckwheat! I will be using the coconut oil from now on for my pancakes, who knew it could make such a difference in my pancakes! I also decided to try the coconut oil to see what it tasted like and though it smelled like coconut, I didn't think it tasted like it but it also did not taste like oil or leave an oily texture in my mouth. I haven't noticed the coconut oil changing the flavor of my foods so I'm able to make savory or sweet dishes with it.
